PROVENCAL TERROIR
- Ripe fruity: Made exclusively from local Provençal fruits, H de Leos Sélection olive oil is produced with the Domaine Leos teams under the control of Christine Cheylan at Moulin Castelas. The olives are picked later in the season and are processed immediately in the mill like all H de Leos oils.
- Green fruity: Made exclusively from local Provençal fruits, H de Leos Sélection olive oil is produced with the Domaine Leos teams under the control of Christine Cheylan at Moulin Castelas. Comme toutes les huiles H de Leos fruité vert, les olives sont ramassées très tôt dans la saison (généralement début octobre) et sont transformées immédiatement au moulin.

Tasting notes
- Ripe fruity: Subtle taste benefiting from aromatic intensity and good length in the throat. It is characterized by an original "ripe fruit" color and taste: it has a light green color with yellow reflections and aromas of almond, red fruits, ripe apples and flowers.
- Green fruity: Fresh and intense taste benefiting from great aromatic power with a nice length in the mouth. H de Leos Green fruity selection is characterized by its color (pale green color and yellow reflections) and its aromatic complexity with a dominant vegetal aroma of artichoke and hazelnut typical of an original green fruity.
GASTRONOMIC COMBINATIONS
- On a hot, cold, salty or sweet dish. Put a drizzle of olive oil on strawberries with a touch of sugar, on autumn fruits (apples, pears, etc.) in tarts or cakes or on all types of savory dishes at the end of cooking.
- Put a drizzle of olive oil on a hot dish (fish, grilled meat, steamed or grilled vegetables, risotto, ratatouille), on a cold dish (raw vegetables: green salad, tomatoes, carrots …) or as an accompaniment to fresh sheep’s or goat’s cheese.
