Vineyard / grape variety
The vineyard is spread out on 13ha with the ambition to grow to 20 ha in the next years. The main grape varieties grown on the estate, are Grenache, Syrah, Cabernet franc, Cabernet sauvignon, Cinsault, Vermentino as well as an old vine of Carignan.

Our products are sold online, and distributed by quality establishments, Michelin starred restaurants, wine sellers, fine food stores (La Grande Épicerie de Paris, Lafayette Gourmet, Printemps du Goût, etc.) L’Olivier de Leos, cosmetic brand is also offered for sale by different concept-stores, perfume shops and 5* hotels.
Team
Joël Gayet implements the Leos project on behalf of the owner alongside Solène Gayet, director of L’Olivier de Leos, Marie Barbé, estate director, Aurelien d’Arzac, Sales manager of Domaine de Leos. The Domaine de Leos is also accompanied by sevral experts, amongt them : Pauline Lagarde for the ecology, Stéphane Derenencourt and Julien Lavenu for the grapevines and the wine, Christine Cheylan for the olive oils. The Leos wines are developed in partnership with Nicolas Jaboulet (Maison & Domaines Les Alexandrins).
The Olive grove
The Olive grove extends over 7.2ha and consists mainly of Aglandau.
Cultures
Domaine de Leos has worked organically since the beginning.
Classified as High Environmental Value (HVE 3) and currently in organic conversion, our farm uses neither chemical fertilizers nor pesticides Our teams are working to maintain 30% of the land in biodiversity, carrying out biological analyzes of biomass and activities (macrofauna and counting of earthworms with the creation of biological pits, counting of flora and arthropods, etc.). Land preparation is carried out by sowing and green manure before planting. Water management is done by drip, and the addition of organic matter is reasonable. We are working on the use of specific plant covers and the protection of pollinators by sowing honey seeds. Our approach to cultivation is personalized by plot, applying the principles of organic cultivation.

Winery / Mill
The Leos cuvée Augusta, range of wines has been launched with the creation of the rosé wine (2022) by DOMAINE DE LEOS’s and MAISON & DOMAINE LES ALEXANDRINS (Nicolas JABOULET) inspired by their great Hermitage white wines. The common will of the two owners to strive for excellence, their shared taste for a gastronomic rosé, their passion for the terroirs and their strong engagement for a more virtuous economy has allowed them to pool their know how to produce this exceptional organic wine.
Harvesting
Our harvests are handpicked, in the vale and plateau of Margoye. For the vines, it is usually in the end of August / beginning of September, at spring for the young olive leaves, between spring and summer for the thyme and beginning of October for the olives.
Land
A slightly sloped plateau, constituted by slabs of rock covered by limestone earth, stony and shallow particularly adapted for the culture of olive trees, truffle oaks and grapevines.

Wine (LEOS cuvée Augusta), Extra Virgin olive oil (H de Leos), truffles, honey (M de Leos), jams and confit with wild thyme (C de Leos), cosmetics (L’Olivier de Leos) made from olive leaves and H de Leos olive oil
Planting
Dates of the main plantings : 2011, 2012, 2015, 2018, 2019, 2022 (olive trees, truffle oaks, vines, lavender).
The plantations were made on land that had been uncultivated for more than 50 years.
In line with our commitments to proximity, sustainability, quality and respect for the terroir, the plants from our vineyard come from a “ massale ” selection from the Bérillon nursery, an excellent French producer, and its “ conservatory of mother vines ”.
