This artisanal confit, cooked in a cauldron, stands out for its unique taste and the singular flavour of the wild thyme. (TN: a confit in this case is also called in French “gelée “, a kind of jelly)
Terroir and harvest
The confit is made from fruit pectin and wild thyme handpicked at bloom on the Domaine de Leos’s plateau (certified High environmental value HVE3), the estate uses neither chemical fertilizers nor pesticides.
Ingredients / Production
Water, white cane sugar, concentrated lemon juice, fruit pectin, thyme (0.7%). Prepared with 0.7g of thyme for 100g of confit). Total content of sugar after cooking 63g for 100g of confit. The confit is made and potted in Robion, just a few minutes from the estate by la Roumaniere (a company involved in social and solidarity economy), under the control of Leos’s team.

Storage and shelf life
Made without preservatives or colourings, Leos’s confits are pasteurised, giving them a shelf life of 3 years. To preserve all their properties before opening, we advise you to store them in a dry place, away from heat and UV rays. Once the jar has been opened, the confit generally keeps for 2 to 3 weeks in the fridge.
SERVING ADVICE
Ideal with fresh cheeses (goat or sheep), or half dried, on a roasted leg of lamb or a guinea fowl, or even to deglaze a meat after cooking or even to put in your ratatouille. You can also spread it on crêpes, pancakes or toast. Thyme is considered excellent for health (thyme is rich in many active ingredients and essential oils, flavonoids, vitamin C and calcium), it can be used in infusion by diluting in hot water.
